Quinoa Salad

You will need:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and (black) pepper to taste

How to:

  1. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is tender and water is absorbed. Remove from heat and let it cool.
  2. In a large mixing bowl, combine the cooked quinoa, chickpeas, cucumber, bell pepper, red onion, parsley, and mint.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss gently to combine, ensuring everything is well coated.
  5. Taste and adjust seasoning if needed. You can also add some feta cheese or avocado slices for extra creaminess.
  6. Serve chilled or at room temperature. This salad can be enjoyed on its own as a light meal or as a side dish with grilled chicken or fish.
